You might be familiar with Porter Road. The Nashville-based butcher shop has been working directly with local farmers for more than a decade to bring us high-quality meat products. The steaks are truly spectacular, and I love that the shop offers secret, pro-favorite cuts, like the Teras Major my retired chef dad adores. This past June, I even spotted beef sticks for more convenient (and shelf-stable) snacking.

Today, however, I’m here to tell you about the shop’s sausages. The ones I’ve tried — brats, dogs, kielbasa, and Italian (sweet or hot, loose or links), you name it — from Porter Road are the best I’ve ever had. The ground chorizo sausage, however, is the one I’ve been adding to my meal rotation all summer — and I don’t plan on stopping anytime soon.

What’s So Great About Porter Road Chorizo Sausage?

The funny thing is, I never much cared for chorizo and was originally reluctant to sample the spicy sausage. But because I’m such a Porter Road fan I tentatively agreed to give their version a try. And I’m glad I did. The bright red-orange meat knocked my socks off, with its Mexican and Spanish influences vying for equal billing in spicy, smoky, bombastic bites.

What’s the Best Way to Use Porter Road Chorizo Sausage?

All summer, I’ve been making brown rice bowls with the chorizo and the season’s best produce, with the pan juices rendering my spice drawer obsolete. Zucchini soaks it up thirstily, carrots cook silkily, corn or sugar snap peas sweeten the zesty meat, and spinach wilts in a sea of spices.

I’ve also stirred in chickpeas or black beans to stretch the chorizo, bulking up the protein with these cheap pantry staples to balance the fat. And I’ve served the sausage on top of shredded Romaine or baby leaves from Little Leaf Farms to make no-dressing salads. 

As the weather cools down, I’m looking forward to letting this spicy sausage continue to work its magic in fall-focused rice, grain, and salad bowls.
